Piper - January 2010

My little darling who doesn't sleep is now 4 months old and weighs 19.9 lbs! Thankfully, our vet doesn't think she will be very big.

This is one of my favorite ones of all time: Tom crunched up on the loveseat while Piper is sprawled out on the couch.
She can sit on command!

Six Monthiversary

Aww today is my 6 monthiversary!! I am very lucky to have spent the last 6 months married to the most wonderful man! (Pictured here doing his best Michael Jackson impression on our honeymoon).
On a side note, our 6 monthiversary coincidentally corresponds with this year's "Blue Monday" A.K.A. the most depressing day of the year!

Mr. R's Birthday Party

Last night Mr. K and I had the pleasure of attending a fabulously tasteful cocktail party hosted by Miss R in honor of her father's 60th birthday and her parents' upcoming 35th wedding anniversary. Should I make a list of my favorite things from the party? Why not?!?

Wedding Album

With just 4 days until my 6-monthiversary, I have finally gotten around to selecting some photos for my wedding album! I wasn't fussy about the first proof of the album so our photographer is doing a second pass at it. I even re-selected some photos. Here are some of my faves from our special day - July 25, 2009. Home Reno

Since Mr. K and I closed on our first home in May of 2008, we have been in a constant state of home renovation. We have redone the main floor with hardwood and new light fixtures. We have re-carpeted the bedrooms and office. We have installed new toilets, vanities, sink tops and fixtures in the bathrooms. We have put down new floor mouldings and installed new 6 panel doors. We have totally upated our 1985 home into something out of the 2000 era ... except for the kitchen! Our kitchen still has linoleum floors, a light fixture similar to those at Applebee's, maple colored cabinets, formica butcher block counters and almond appliances! It is terrible! The worst part about it is that we have redone the whole rest of the place but when we have friends over, everyone manages to congregate in our hideous 1985 kitchen! The only plus side to our kitchen is that it is quite large. I am hoping to redo this room in the next year or so to make our place completely remodeled!! Today I received an email from Target with some promotion code which I won't use. This wasn't what struck me. What caught my attention was the picture of the kitchen on the advertisement! It is my vision put together completely!! Here it is:

Busy Weekend!

This past weekend was insanely busy! Friday night Mr. K and I relaxed at home. I think we actually fell asleep watching "Dog Whisperer" around 8:30. Saturday I had a dentist appointment in the morning, took Piper to get a mani/pedi after that, then headed up to Naomi Martinez's studio for a make up application lesson at 1:30! (Before & after pictures coming soon!) The lesson was awesome. I learned a ton - everything from how to properly apply primer, pressed powder foundation and concealer, to the smokey eye technique! It was awesome having my make up done for my big night out at the Mariah Carey concert! I was shocked how wonderful she sounds in person. She performed for almost 2 hours during which she had about 4 wardrobe changes. For what it's worth, she really CAN hit those high notes in "Emotions". Super impressed!

Sunday I finally went to see Miss R's new Manhattan apartment. It is so perfect for her! Another Miss R and Mrs. W also joined us and the 4 of us enjoyed lunch at 40 Carrots. The Miss R's have been talking about this restaurant for years and I finally got to go! It was fantastic. I had the "bunched lunch" with Carrot Soup, 1/2 Chicken Salad Sandwich and Frozen Yogurt for dessert. Way too much food, but deee-lish.

Another Great Weeknight Recipe

I really do not want my blog to become all about cooking and recipes but, as a wife, cooking is occasionally part of my job description.

Anyhow, I tried this Barefoot Contessa recipe last night after seeing her prepare it on her show last Sunday morning. The only substitution I would recommend is to half all the ingredients for the sauce/dressing. As is, it makes way more than you would need. I also added in some different veggies like baby corn and water chesnuts (found in the Asian food section of the grocery st0re).

Easy Peasy Weeknight Dinner Recipe

Months ago a friend emailed me a recipe for Rosemary Bell Peppers with Chicken which I finally tried around Thanksgiving time. This recipe is so tasty and easy it has become part of our weeknight menu!

Here's what you'll need:
  1. Chicken breasts (I use the tenderloins, less cutting)
  2. 2 bell peppers (I prefer yellow, orange or red)
  3. 1 sweet onion
  4. Fresh rosemary
  5. 1/4 c. lemon juice (I use the bottled)
  6. 2 tbsp. olive oil

Start but cutting chicken into 1 inch cubes. Cook in 1 tbsp. olive oil in a frying pan for about 5 minutes or until cooked through. Set aside in bowl and cover (I usually put it in the oven).

Cut peppers & onion into strips and sautee in remaining 1 tbsp. of olive oil in the same pan the as the chicken. When the veggies are wilted to your liking, add the chicken back in. Pour in 1/4 c. lemon juice and 1-2 tbsp. of minced fresh rosemary. Allow everything to simmer together for a few minutes.

Serve over pasta or rice or even on its own! Enjoy!
